Hector Aragon, co-owner of Luz Tacos, recalls that all his best memories include an epic outdoor adventure followed by a delicious meal with friends.

Bringing people together to create experiences that will last a lifetime is the vision behind , a mobile gourmet food trailer and custom catering company that’s open seven days a week for lunch and dinner outside local craft brewery, A-Frame Brewing.

“We wanted to create a place where people can come with their knee pads on, bike in hand and all muddy, to finish the day with an awesome meal,” Aragon says.

“We want friends and family to share good conversation with great Mexican food accompanied by a craft beer from A-Frame, or a Horchata, a non-alcoholic Mexican drink we make in-house.”

Together, with co-owner/ executive chef Rodrigo Rodriguez, Aragon restored an iconic 50s Airstream trailer that needed a complete overhaul and created a menu that would evoke the Mexico of his upbringing: where the absolute best food came from street vendors.

He wanted to share that experience with his adopted homeland of Canada, in his chosen new hometown of Squamish.

“My idea was to be part of a community that I really love,” Aragon says. 

Aragon is an adventurer. Born and raised in Mexico, he studied computer science and engineering and travelled the world.

He met his wife while they were both travelling through India and Nepal. When they both returned home, they continued their relationship long-distance until Aragon eventually joined his wife in Victoria, where she was a student at the University of Victoria.

“I went from Mexico, to Victoria, to Vancouver, to Squamish,” Aragon recalls.

“We always knew that our final destination would be in Squamish.”

Luz Tacos offers authentic Mexican food made with the freshest ingredients from scratch.

“The food really tastes different when you make it from scratch and always serve it fresh,” Aragon says.

He also notes that the food truck’s safety standards are just as stringent as those in a restaurant. Luz Tacos is regularly inspected for food safety, and all staff are Food Safe qualified.

Tacos al pastor

“Tacos al pastor are an emblematic taco of Mexico City,” Aragon says. 

“It’s a fusion from a long time ago when people from Lebanon immigrated to Mexico City.”

The Lebanese brought the traditional Shawarma cooking technique of shaving off thin strips of meat that is roasted on a slow-turning vertical rotisserie or spit, and paired it with a traditional Mayan spice.

Luz’s Tacos al pastor featured grilled pork marinated in achiote rub, served with chopped onion, cilantro, pineapple and lime served in double six-inch corn tortillas.

Gringa

At the end of the day, the leftover pastor meat is shaved from the spit and saved in the fridge for the next day, where the spices marinate and the meat becomes even more flavourful. That meat is then heated on the grill and used in the Gringa quesadilla.

The Gringa is a flour tortilla with melted cheese, topped with cabbage, guacamole, pico de gallo, thin-sliced tortilla chips, crema, pickled onions and cilantro. 

Burritos

“Our burritos are not a traditional burrito,” Aragon says. 

“We do chilaquiles burritos, made with deep-fried tortilla, put on the grill with cheese and tomatillos. 

The layers of meat, cheese, and tortilla are stacked almost like a lasagna, topped with Mexican slaw, pico de gallo, salsa of your choice, pickled red onions, cilantro and then rolled together to eat by hand.
